Our dishes are always made according to traditional recipes with their tried and tested methods, passed down from generation to generation, respecting and understanding “slow-cooking” and following the ideas that have always been our guides:

By using local produce, as well as guaranteeing the quality, nutrition and freshness of our dishes, we help to develop the Basque primary sector. Thanks to our support, the small farms can continue to use traditional production methods, respecting nature’s natural cycles. Produce harvested at just the right time and at a fair price, favouring the local economy.
THE IMPORTANCE OF THE INGREDIENTS
We compose our menus according to seasonal availability. Many of the ingredients are farmed organically or come with a quality assurance stamp. One of the advantages of cooking with seasonal produce is that their organoleptic properties are at their very best. Our expert cooking skills mean that we achieve enormously tasty and flavoursome results.
RESPECT FOR NATURE
We adapt to the product and take it in any shape or size. We don’t care what it looks like. Even with “ugly” vegetables we know how to seduce the palate thanks to the flavours of seasonal produce. We reject all genetically modified foods.
No food is allowed into or out of our kitchen looking like anything other than food; our work focusses at all times on the produce, respecting every ingredient during its preparation and serving real food. A tomato tastes and smells like a tomato.
FOOD THE TRADITIONAL WAY
We endeavour not to use industrially processed foods, preferring to substitute them for others made the traditional way. This allows us to control what we serve our diners from start to finish. Sausages, tomato sauce, cakes, biscuits, bread and ice cream are only a few examples of the things we make ourselves. Our chefs constantly study ways to carry out these processes.
All of the people who work at FEDE PACHA&Co are part of a family – a great team. Our working conditions are designed to guarantee personal well-being. We also take good care of our livestock and crop farmers by paying them a fair price for their work. We understand the effort that goes into maintaining traditional methods, and that’s why we give them the appreciation they deserve.
